تشير النتائج إلى وجود تفوق للحوم الحيوانات كبيرة العمر في نسبة الدهن والبروتين والرماد وبعض العناصر المعدنية وبعض الأحماض الأمينية الضرورية عنها في صغيرة العمر سواءً في لحم الذكور أو الإناث, مع ملاحظة عدم وجود فرق معنوي في نسبة البروتين, في حين انخفضت نسبة الرطوبة وزادت قدرة اللحم على ربط الماء بشكل واضح بتقدم عمر الحيوان.
من ناحية أخرى تبين النتائج وجود ارتفاع في نسبة الدهن والرماد والعناصر المعدنية بلحم الإناث مقارنةً بلحم الذكور, في حين وجد تقارب في نسب البروتين وبعض الأحماض الأمينية الضرورية للحم الإناث و الذكور في الأعمار المختلفة.
يستنتج من القيم المتحصل عليها لمكونات لحم الماعز الجبلي السوري ومقارنتها بالمعطيات الواردة في الدراسات المرجعية للحم الأغنام والأبقار, وجود تقارب في نسب مكونات لحم الماعز مع لحم الأبقار ولحم الأغنام, وبالتالي تقارب في القيمة الغذائية بينها مع ملاحظة تفوق لحم الماعز نسبياً في بعض الأحماض الأمينية (تربتوفان – مثيونين) وبعض العناصر المعدنية.

The aim of research is to study the effect of age and sex of the animal in the chemical composition of the muscular tissue of the meat mountain goat rampant in northern Syria
Results indicate the presence of superiority meat large animals age in fat, protein, ash and metal elements and some essential amino acids ratio reported in a small age, whether in male or female flesh, with a note there is no significant difference in protein content, while the humidity decreased and increased meat capability Water connect clearly the progress of the age of the animal.
On the other hand, the results show the presence of high in fat, ash and mineral elements compared to the proportion of female meat stuffed male, while he found a convergence of rates of protein and some essential amino acids for females and males in the flesh of different ages.
Inferred from the obtained values of the components of the Syrian mountain goat meat and compare them with data contained in the reference studies for the meat of sheep and cows, and there is a convergence of rates of goat meat components with bovine meat and meat sheep, and thus a convergence of nutritional value, including with Note outweigh the relatively goat meat in some amino acids ( Terptovan - Methionine) and some mineral elements.
