- Carried out the adsorption of the enzyme immobilized inulinase from Kluyveromyces marxianus Y-303 cation exchange fiber VION KN-1 and the optimal conditions for the functioning of the drug. The physico-chemical properties and characteristics of the immobilized enzyme hydrolysis of inulin free and immobilized Inulinase.Of particular significance in the present work to acquire the immobilization of enzymes break down polysaccharides and polifruktozidy. Immobilization of enzyme on the carrier takes it from the category of homogeneous catalysts in a heterogeneous, with a number of technological advantages. Inulinase (2, LB-B-fruktanfruktanogidrolaza, EC 3.2.1.7) specifically hydrolyzes a-2,1-bond inulin to fructose and fructooligosaccharides, and the reaction conditions milder than acid hydrolysis, which requires low pH, high temperature applications acid-specific equipment. In this connection, special importance attaches to studies on the structural and functional properties of the immobilized enzyme and the kinetics of hydrolysis inulinsoderzhaschego raw materials, as well as a number of theoretical and practical issues associated with the study of the influence of support nature on the activity of inulinase. Production of fructose from starch by fermentation consists of several stages and requires three razlychnyhfermentov: b-amylase, glucoamylase and glucose isomerase. At the same time receive a 45% fructose syrup HYDRATED. The use of inulinase for splitting inulinsoderzhaschego material allows the process to one stage and receive 95% fructose syrup. The aim of our study was to investigate the conditions of immobilization of inulinase isolated from yeast Kluyveromyces marxianus Y-303 on various media adsorption method, and the study of the physicochemical properties of the immobilized enzyme preparation and reaction hydrolysis of inulin.
